Salmon with Napa Cabbage & Noodle Salad

with Poplar Grove Pinot Noir 

Prep time: 3 hours                Cooking time: 25 mins             Serves: 4

 

Ingredients for Salad:
  • ½ small Napa cabbage, thinly sliced
  • 2 cups rice noodles, soaked
  • 1 medium carrot, julienned or grated
  • ½ red bell pepper, thinly sliced
  • 3 green onions, thinly sliced
  • ¼ cup cilantro leaves, chopped (optional)
  • ½ cup peanuts or cashews, chopped (optional
Ingredients for Dressing:
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp honey or maple syrup
  • 1 tsp ginger, grated
  • 1 tsp Sriracha (adjust to taste)
  • Salt and pepper to taste
Ingredients for Salmon:
  • 4 portions fresh Pacific Salmon fillets
  • Salt and Pepper to taste
  • 1 tbsp Miso Paste
  • 2 tbsp Soy Sauce
  • 1 tbsp Brown Sugar
  • 1 tbsp Rice Wine Vinegar
  • 2 tsp Sesame Oil
  • Sesame seeds, for garnish
Directions for Salmon:
  • Lightly salt and pepper the salmon.
  • In a small bowl add the miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil. Wisk together until smooth. Reserve 1 tablespoon of marinade.
  • In a baking dish, add the salmon and the sauce. Let it marinade for 1-3 hours.
  • Preheat oven to 375°F. Place the marinated salmon on a rimmed baking sheet with parchment, discard the extra marinade. Bake for 12-15 minutes, or until fish is almost done and opaque. Brush with reserved glaze and Broil on high for 1-2 minutes until fish reaches 125-130°F degrees in the center.
  • Garnish with sesame seeds if desired.
Directions for Salad:
  • Soak the rice noodles in warm water for 10 – 15 minutes and drain well.
  • Prepare the vegetables and combine in a medium sized bowl (keeping the cilantro and nuts aside). Toss together with the drained noodles.
  • In a small bowl, make the dressing. Add all the dressing ingredients together and whisk until combined.
  • Pour the dressing over your salad and toss to coat completely. Wrap the bowl and let chill in the refrigerator for at least 30 minutes and up to 4 hours for the flavors to meld.
  • To finish, garnish with cilantro and chopped nuts.
